Die Bezeichnung "Pain Paillasse" ist eine geschützte, hinterlegte Marke und ein patentiertes Produkt, unterzeichnet von Aime Pouly. Es gibt das Pain Paillasse grundsätzlich in drei Weizenmehlmischungen, weiss, dunkel und rustik. Die Marke wird im Franchising vertrieben. Auch wenn wir es nur Wurzelbrot nennen dürfen, es steht dem patentierten Bruder in nichts nach (habe es getestet.......).
According to Wikipedia, twisted bread is a hearty Swiss bread that is twisted along the longitudinal axis and looks like a root. The taste is slightly malty. It goes well with a hearty meal and it is a typical party bread. The term "Pain Paillasse" is a protected trademark and lodged a patented product, signed by Aime Pouly. Pain Paillasse is produced basically in three wheat flour mixtures, white, dark and rustic. The brand is distributed in franchising. As i can easily buy it here in Switzerland, i had the chance to directly compare both versions...and now you can make an educated guess....

In addition to all the bread experiments - there should always be a slice of good wholemeal bread for a decent breakfast. For the health conscious it is mandatory, for those with the breakfast and main meal is a true blessing.
The recipe is taken again from the book "Brot - So backen unsere besten Bäcker" by Christine Schroeder and Björn Kray Iversen. The recipe was provided by the Effenberger Wholemeal bakery in Hamburg ....
