Huusbrot - Jubiläumsbrot / Anniversary Bread

Zum Einjährigen Jubiläum meines Brot-Blogs schreibe ich über ein sehr einfaches aber überaus geschmackvolles Brot: Huusbrot. Die Faszination am Brotbacken liegt meiner Meinung nach an der Faszination wie aus einfachen, ja einfachsten Zutaten derart geschmackvolle Brote entstehen können. Aus eigener Erfahrung kann ich allerdings bestätigen, dass dies ein umfangreiches handwerkliches Geschick und einige Erfahrung bedarf. Brotbacken lehrt Demut. Es gibt allerdings auch wenig vergleichbare, schöne Momente wie die am Ende eines erfolgreichen Backtages und der Bestätigung durch Familie und Freunde. Ich werde mich auch weiter dem Brotbacken widmen, sofern es die wenig freie Zeit erlaubt und mich auch zunehmend auf die Einfachen aber Guten Dinge konzentrieren. Ich möchte mich hier auch bei allen Anderen Bloggern bedanken bei denen ich eventuell Rezepte "ausgeliehen" habe aber auch immer wieder inspirierende und motivierende Anregungen erhalten habe...
For the One Year Anniversary of my bread-blog I write about a very simple but very tasty bread: Huusbrot. The fascination of baking bread is in my opinion as to the fascination of simple, so simple ingredients which can result in such a tasty bread. From my own experience I can confirm, however, that this requires comprehensive technical skills and some experience. Baking bread teaches humility. However, there are few comparable, beautiful moments like the end of a successful baking day and congratulations by family and friends. I will devote myself to continue on breadmaking, if the time permits to do so and to focus increasingly on the simple but good things. I would like to thank all the other bloggers in which I might Recipes "borrowed" but where I also always got inspirational and motivational ideas...

Schmalzbrot / Lard Bread

Ich habe dieses Brot schon viele Male gebacken, aber zu der Zeit noch mit kommerzieller Hefe. Da ich keine Hefe mehre verwende, galt es das Rezept umzustellen. Das Rezept habe ich von Lutz - Griebenschmalzbrot nach Franz Josef Steffen "ausgeliehen". Auf ihn ist eben Verlass - insbesondere wenn er ein Brot zum Favoriten erhebt. Hier kann ich ihm nur beipflichten...
I have made this bread already multiple times, but at that time with commercial yeast. I don't use commercial yeast anymore and therefore i had to adapt the recipe. The original version is taken from Lutz Griebenschmalzbrot nach Franz Josef Steffen. He is reliable, especially when he nominates a bread as "favorite". I can only agree with him...

Was soll ich sagen...
Als ich das Brot damals bei Lutz --> Lutz vom Ploetzblog gesehen habe war der Auftrag klar. So ein wunderschönes Brot will ich auch backen. Das war der Plan - ein wenig Mut gehört schon dazu, was ich auch bereits im Kommentar geschrieben hatte. Die Messlatte wurde ziemlich hoch gesetzt, dafür gab es aber Gratis Beratung dazu. Also bin ich mit ziemlich viel Respekt und nur EINEM Rezept an den Start gegangen und der erste Versuch ging prompt in die Hose...

When i have seen the bread at Lutz' Lutz vom Ploetzblog the order was clear to me. I will make such a beautiful bread, too. This was the plan - it needs a lot of courage, which i already stated in the comment to his bread. The task now was really challenging but Lutz gave a lot of advices for free. This time i started with only ONE recipe but the first trial was a failure...
