Endlich ist es soweit - das Warten hat ein Ende. Ich habe mir ein Herz gefasst und trotz Vorwarnungen, dass das Brot süchtig macht, das Nachback-Vorhaben in die Praxis umgesetzt. Das Rezept und die Anregung stammen von MC und Ihrem wundervollen Blog Farine (Chocolate and Current Sourdough).
Wahrscheinlich ist es die Vorliebe für Schokolade und Brot aber auch die schöne Beschreibung und die Bilder, die mich zum Nachbacken angeregt haben. Was soll ich sagen....
It's finally there - the wait is over. I have taken a heart and despite warnings that the bread is addictive: "...once you have made this bread, you'll find yourself compulsary making it again and again" i have made it. The recipe is taken from MC and her wonderful blog Farine (Chocolate and Current Sourdough).
It is probably that i like chocolate and bread but also the beautiful description and the artistic pictures that have inspired me to make this bread. What can I say...

Brot mit Durumweizen / Semolina Bread

Semolina Bread - thin and crispy Crust with yellow crumb and wonderful taste

Bei unserem letzten Ferienaufenthalt in Portugal habe ich mich in ein hiesiges Brot verliebt - Pão Alentejano. Ein mit 60% Durumweizenmehl hergestelltes Sauerteigbrot welches eine wundervolle Farbe, Textur und eine sehr geschmackvolle und feuchte Krume hatte.
Eine wundervolle Symbiose zwischen hiesigem Brot und dem rauhen Klima an der Westküste des Atlantik. Das Originalrezept ist dem von Hamelmann's Semolina Bread sehr ähnlich und da ich bisher noch kein Brot mit Hartweizenmehl gebacken habe, habe ich mich zunächst an dem Hamelmann-Rezept orientiert. Ich habe die klassische Brotform gewählt, wobei das Original Pão Alentejano mehr einem Christstollen gleicht. Ein update auf das Original wird folgen...
On our last holiday in Portugal i fell in love with a local bread - Pão Alentejano. Made with 60% Semolina Flour as sourdough bread with a wonderful yellow color, texture and a very tasty and moist crumb. A wonderful symbiosis between local bread and the harsh climate on the west coast of the Atlantic. The original recipe is very similar to Hamelmann's Semolina Bread and as it is my first experience with semolina breads i have decided to follow the Hamelmann's original recipe. I have choosen a classic shape versus the original shape of the Pão Alentejano which is more like a Christmas Stollen. An update on the original bread shape will follow...
