I was looking for a pão alentejano recipe for a long time and now i was successful. Since i came back from a holiday at the Algarve / Alentejo in Portugal, i was trying to find a recipe of the wonderful country bread i have eaten there. As with all traditional recipes, there are a wide variety of different versions. Out of my memories i tried to guess taste, color and composition more or less. By accident I have found at Björn's blog (der brotdoc) a recipe, which corresponded exactly to what I had imagined for the pão alentejano.
